This wine is made as was done many years ago, with a fermentation in hollowed out stone in the vineyard. Made with the local Catalan grape Sumoll, this makes a wine that best represents the terroir.
The best grapes are selected and then fermented in the stone hole for a month to get the ultimate expression of Sumoll according to the Vinyas family. Then another seven months in stainless steel tanks to settle down before this wine goes into the bottle without clarification and filtration. Minimal intervention at its best.
Rich in red fruit and a certain grittiness makes the wine particularly interesting. Rich, yet light. Fresh, yet fruity. Truly a wine that you must try.
Limited edition: 563 bottles
Natural wine: unfiltered & no added sulflite (17 mg/l total SO2)
